In 1997 we started with the production of sparkling wines and from the first moment we had no doubt that we should only do classical method of fermentation in the bottle. We believe that you are already familiar with our two champagnes Šember Brut and Brut Rosé Šember, and you will soon have the opportunity to taste our new champagne named Pavel.
Chardonnay will in future be used exclusively for sparkling wines and still wines from Pinot Noir and Rajnski Riesling are presented as the perfect assortment for Plesivičko-Okićko vineyards.
Production of macerated white wines for us is not a novelty nor a passing trend. Their story begins in the vineyard. Grapes are not treated with conventional preservatives but with maximum care, intensive lowering of yield and work on quality rather than quantity of grapes. In the process of vinification we are using indigenous yeasts and maceration and fermentation is done in wooden barrels or amphoras depending on the wine. Wines are specific stylistics, from taste to texture, with distinctive tannins and color extraction which is often ranging from golden yellow to amber. This wines are called by many people - orange and this color is taken root to fourth wine color.
